Application & Function
There are three stereoisomers of tartaric acid: Lithotartaric acid, L-tartaric acid and mesotartaric acid. The optical rotation of the mixture of equal amounts of right-handed body and left-handed body cancels each other out, which is called racemic tartaric acid. The meso form does not exist in nature and can be synthesized chemically. All kinds of tartaric acid are colorless crystals that are easily soluble in water. It is widely used in the food industry, such as beer foaming agent, food sour agent, and flavoring agent, used in soft drinks, candies, fruit juices, sauces, cold dishes, baking powder, etc.
